Tasso Ham: “What is this and what do I do with it?”
Tasso is a highly spiced and highly smoked Cajun ham. Consider it more of a seasoning or ingredient in dishes that have moist heat. You can slice, dice, or mince it to use in dishes. You can even sauté it to crisp it like a spicy bacon bit. The choice is yours. Here are a few ideas:
· Place a teaspoon-tablespoon of it in an omelette.
· Stir into your baked beans.
· Gumbo or jambalaya.
· Mac and cheese with Tasso
· Sauté some and add to a grilled cheese sandwich.
· Top your baked potatoes or twice-baked potatoes.
· Google it. There are many traditional southern dishes like shrimp and grits with Tasso.
